Can’t decide if you’re craving for something sweet or sour to snack on? Why not have
both in one mouthful with this unique froyo recipe!

1. SWEET AND SOUR FROZEN YOGURT

Prep Time: 10 Minutes
Freeze Time: 1 Night 
Makes: 12 Froyo (Mini Muffin Cups) 

Ingredients:
  • 1 cup (140g) frozen blueberries
  • 2 cups (480g) coconut yogurt
  • Juice of 1 lemon
Instructions:
  • Blend all ingredients together (until smooth)
  • Pour into mini muffin cups
  • Freeze overnight

2. HIGH FIBER SNACK

Freeze Time: 1 Night 
Makes: 12 Froyo (Mini Muffin Cups)

Ingredients:
  • 3 ripe bananas
  • 2/3 cup coconut flour (80g)
  • 1 tsp cinnamon
  • 1/4 cup walnuts (30g)
  • Pinch salt
Instruction:
  • Blend the bananas
  • In a bowl, combine all ingredients with banana puree. (Until dough forms)
  • Roll into balls or place in muffin cups
  • Refrigerate until firm (4 hours).

chocolate chip cookies!

3. IRRESISTABLE COOKIES

Ingredients:
  • 1 1/4 cups quick oats
  • 1 cup white whole wheat flour
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon kosher salt
  • 1/4 cup unsweetened applesauce
  • 4 tablespoons unsalted butter — melted and cooled
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 1/2 cup honey
  • 1/3 cup dark chocolate chips
  • 1/4 cup raisins
  • 1/4 cup well chopped raw walnuts or pecans
Instructions:

99991. In a large bowl, whisk together the oats, flour, baking powder, cinnamon, and 
999999salt.

99992. In a medium bowl, combine the applesauce, butter, egg, vanilla, and honey. 
999999Whisk until blended. 

999999Pour the liquid mixture into the flour mixture and stir just until combined. The
999999dough will be wet and sticky. 

999999Fold in the chocolate chips, raisins, and walnuts. Place in the refrigerator and
999999let chill for at least 30 minutes or up to 3 days.

99993. When ready to bake, place a rack in the center of your oven and preheat the 
999999oven to 350 degrees F. 

999999Line a large rimmed baking sheet with parchment paper or a silicone baking 
999999sheet. Remove the dough from the refrigerator (if it is very stiff, you may need 
999999to let it sit out for 5 to 10 minutes). 

9999999With a cookie scoop or spoon, drop the dough into 1 1/2-inch balls and
9999999arrange on the baking sheet, leaving 1 inch of space around each. With your
9999999fingers, gently flatten each cookie to be about 3/4-inch thick.

99994. Bake until the cookies are golden and firm around the edges and set on top, 
999999about 9 to 10 minutes. 

999999Place the baking sheet on a wire rack and let the cookies cool on the baking
9999999sheet for 2 minutes, then transfer the cookies to the rack to cool completely.
